Pistachio and American Grana™ Crusted Chicken - Bulk Recipe

Ingredients:

24 large chicken Breasts, cleaned 1 ½ Tbls. cracked black pepper 2 ½ Tbls. kosher salt ¾ # or 12 Tbls. Unsalted Butter Topping 4 c. ground pistachios 8 c. grated American Grana™ 4 c. panko Bread Crumbs (Japanese bread crumbs) 1 c. unsalted butter, melted 1 tsp. Paprika 4 Tbls. Kosher Salt 2 ½ Tbls. Cracked Black Pepper

Instructions:

1. Preheat oven to 400 degrees. 2. Sprinkle chicken breasts with salt and pepper then heat butter over medium high heat in two large sauté pans. 3. Place chicken breasts in hot pans and cook on each side for 2-3 minutes or until lightly browned. 4. While chicken is cooking combine all ingredients for the topping in a medium size bowl. 5. Once chicken has cooked on both sides, remove the pans from the heat. 6. Top each chicken breast generously with topping in original sauté pans. 7. Place chicken in the preheated oven and cook for 20 minutes. 8. Serve immediately with your favorite side dishes. Yield: 24
