Burgundy is known as Bourgogne in France, and has a long history in winemaking. Each sub-region of Burgundy is so different from each other that it is hard to address the region as a whole, and to make any sweeping generalities. The flinty, classic Chablis flavor is made solely with Chardonnay grapes, while the freshness of Beaujolais Nouveau comes from the fruity Gamay.
