Fall Fontina Sandwich

Turkey & Fontina Cheese Panini Recipe


Ingredients:
Panini Press 8 slices good quality bread (La Brea, Concept two etc..) ? c. butter, room temperature 16 slices BelGioioso Fontina cheese 1 # good quality smoked turkey, shaved 1 granny smith apple, sliced Cranberry Chutney- 1 small red onion ? c. champagne vinegar 4 c. dried cranberries 1 tsp. kosher salt 1 tsp. chopped sage 1 ? Tbls. Honey 2 c. water *Sauté ¯nion over medium heat. Deglaze with vinegar. Add remaining ingredients and simmer for 20 minutes

Instructions:
Preheat Panini Press 1. Make cranberry chutney; cool 2. Butter two slices of bread and place face down on a cutting board. Top with Fontina, Smoked Turkey, sliced apple, and 1 Tbls. of chutney. 3. Place top on sandwich and place on Panini grill. 4. Grill until golden brown. Repeat with remaining sandwiches. 5. You can refrigerate remaining chutney for up to two weeks. Yield: 4 servings
